Nitrate is found naturally in the environment and is an important plant nutrient. Nitrate can reach both surface water and groundwater as a consequence of agricultural activity.
In general, the most important source of human exposure to nitrate is through vegetables and through meat, however in the case of bottle-fed infants, drinking water can be the major external source of exposure to nitrate, which increases the risk of methaemoglobinaemia for those infants.
